Cauliflower "Fried Rice"

<p>I don’t eat any grains but fried rice has always been a favorite food. This is my own variation of cauliflower fried rice. What I use changes depending on what’s available. <span class="caps">ALL</span> my ingredients are either locally sourced or organic. Adjust seasonings to taste. Ingredients
1 Whole
Chicken
2 Cups
Sugar snap peas
1 Cup
Carrots
2 lbs
Cauliflower florets
1 bag
Broccoli florets
1/4 Cup
Extra Virgin Olive Oil
1/4 Cup
Tamari Sauce
1 Whole
Onion
1 Bunch
Garlic Scallions
1 Tbs
dehydrated ginger
3 whole
Eggs
Step by Step Instructions
- Bake and remove meat from 1 approx 3lb chicken
- In a food processor, pulse cauliflower, broccoli, carrots to about the size of rice. Cauliflower "rices" better semi-frozen.
- Place all ingredients in large bowl. Add Tamari sauce, spices, olive oil and mix well.
- Place in large roasting pan and roast at 375 F for about an hour, stirring every 20 minutes or so. Bake until vegetables soft.
